In many ways, the Pereira sisters symbolize the new generation of coffee producers in Brazil, using innovative processing methods to produce exceptional coffee (techniques derived from the wine world). They took over the farm from their father and then renamed it to Irmãs Pereira (meaning the Sisters of Pereira).

 

The freshly picked coffee is allowed to dry in its skin, which allows for a controlled and soft type of fermentation that gives a soft and round coffee with a character of chocolate, hazelnut and caramel. The body is powerful yet soft. The coffee is excellent both as Espresso & Drip.

PEREIRA SWEET NATURAL

This is the first in a series where we select one of our single origin coffees and roast them a little longer and darker, given them an espresso profil. The slightly longer roasting profile softens the acid in the coffee and increases the fullness.

El Salvador San José has a soft acidity that we think fits as well as a modern espresso. There is some acidity here, but it is nicely balanced by the coffee's milk chocolate sweetness.
