Luiz Paulo Dias Pereira Filho owns the farm Fazenda Santuário Sul and is a true specialty coffee legend, he is behind several lots of winning coffee in various coffee competitions, including the Cup of Excellence.

 

He founded this farm as late as 2015, when he decided to show the world what variations there are to be found in Brazilian coffees. By planting over 30 exotic varieties and experimenting with different types of fermentation and drying, he has really succeeded. We have tried several of his coffees and visited him in Carmo De Minas many times, so it is extra fun to roast his coffee. This is a Natural Rume Sudan, a variety native to Ethiopia but later bred in Sudan.

 

In this micro-lot we find an elegance and soft chocolate character that is balanced by a very sweet and warm fruitiness. We usually call this type of coffee flattering, we think Luis takes that as a compliment.
