THIS IS THE NEW HARVEST OF THIS BIG FAVORITE FROM LAST YEAR
This little microlot is from one of our favorite producers, Luis Calderon. The coffee that Luis calls Papayo he grows on his farm Villa Betulia, in the region of Huila. This unknown variety, which is not yet formally classified, has been named by Luis himself because the berries really taste like Papaya.
The coffee berries have been picked by hand when they are fully ripe and have then been peeled before they have dried together with all their sugar on raised drying beds for 27 days. The result is a truly complex coffee with caramel, honey, sweet fruit and a really complex and creamy elegance in the character.
